PROSCIUTTO DI MODENA (P.D.O.)ACCORDING TO REG. EC 1107/96 AND THE REG. EU 1151/2012 CERTIFIED BY AN APPROVED INSPECTION BODY BY MIPAAF

Prosciutto of Modena P.d.o. is obtained from national pig legs raised and fed according to strict production requirements aimed at obtaining high quality meat. All stages of production, from breeding, slaughter,  curing, are tested and certified to ensure from the outset the proper selection of raw materials needed to obtain an excellent ham. Only the legs are sent to the appropriate seasoning which is still made with artisan methods within the typical area corresponding to the hills and valleys extending around the basin-water catchment area of the river Panaro, and starting from the foothills not higher than 900 meters altitude including the territories of the provinces of Bologna and Reggio Emilia. In this scenario of traditions and ancient tastes the curing of the Prosciutto of Modena takes place which lasts 14 months; at the end of that curing the entity appointed by the Ministry of Agriculture gives the distinctive branding.

HOMEGROWN HAM LAND OF MYTH

The Homegrown Ham Land of Myth was born in the Ham factory F.lli Guerzoni, sole producer as it is located in one of the most famous territory in the world "Maranello" where a consortium with the town was set up named "Land of Myth" which has the task of safeguarding and guaranteeing the origins of the craft products of the territory. The selection of fresh meat for the Homegrown Ham Land of Myth" is obtained from National pig legs raised and fed according to strict recipes. Only the suitable legs are sent to the appropriate curing which is still made with traditional methods: the long maturation period of at least 15 months, the weight  never less than 9.5 kg. at the end of the maturation and the total lack of preservatives give this product a sweet and intense scent with savoury flavour but not salty and a bright red colour that recalls the traditional flavours of the past.

PROSCIUTTO “RISERVA SPECIALE”

(Ham "Special Reserve")

The Special Reserve is a cured ham made from pigs' legs from only a few selected European slaughterhouses to obtain exclusive heavy pieces and processed while maintaining unaltered the same techniques of artisanal hams. Features of this raw ham are the total lack of preservatives, brilliant colour and intense aroma that make it a great product. Available with bone and boneless whole or in pieces, with 10 months minimum curing.

PROSCIUTTO “IL DELIZIOSO”

(Ham "Delicious")

The Delicious is a cured ham made from pigs' legs from only a few selected European slaughterhouses to obtain medium, light-weighted pieces and processed while maintaining unaltered the same techniques of artisanal hams. Features of this raw ham are the total lack of preservatives, brilliant colour and intense aroma that make it a great product. Available with bone and boneless whole or in pieces, with 9 months minimum curing.
